About Thyme in the Country

Our property, Thyme in the Country was established in the 1880’s in the heart of Upstate New York’s Columbia County as a small farm with a carriage house and a main house.  Over the years out-buildings; a milk house, horse barn and garage workshop were added. We feel very fortunate and proud to be part of a community with so much to offer visitors looking for an authentic and meaningful getaway. 

Currently we have two comfortable and homey cottages that each accommodate two people.  Mary and Barry reside in the Main house and are available to answer questions and make your stay at Thyme in the Country as comfortable and enjoyable as possible.  Helping our guests put together a vacation experience interwoven with the local culture and heritage of this area is our specialty and we look forward to meeting you soon!

For 15 years the main house served as a bed and breakfast, run by Mary and Bill Koch and our son Ted. The B&B era ended in 2022 but over the past year and a half we have been busy changing things up a bit at Thyme in the Country. Mary is still here running the business with her new helpful friend, Barry. Ted has grown and flown for the most part but when he is not in Ithaca studying, you might find him and his adorable Athena helping out on the farm enriching the gardens and adding new plants to the landscape. The same easy-going vibe still exists along with our high standards for environmentalism and now the out-buildings have been transformed into accommodations for guests.  

In the heart of our property is our beautiful one-acre organic garden overflowing with an abundance of fresh vegetables, fruits and herbs.  Our farming is done without the use of pesticides or chemical fertilizers.

From skating in the moonlight over a frozen pond, to jumping from a swing into a pile of fall leaves, we try our best to have our guests relax and enjoy the peace of country living at its simple best.  We are committed to healthy and sustainable living; “green” principles are incorporated into every aspect of what we do, from the food we grow to the electricity we use.  We live and promote environmentalism, and pass the benefits on to our guests.
